Meet Greg Lambrecht of Coravin in Taunton Mass

Today we’d like to introduce you to Greg Lambrecht. Greg, can you briefly walk us through your story – how you started and how you got to where you are today. I fell in love with wine as a young man and had amassed an at-home collection that began collecting dust while my wife was pregnant. I still wanted to enjoy great glasses of wine, but didn’t want to commit to full bottles. For me, wine is a thinking beverage – it’s something you contemplate, experience side by side. I wanted to taste three or four different bottles, but wasn’t about to pull the cork on four bottles in one night. I tried preservation systems but nothing effectively allowed me to drink what I wanted, when I wanted, without sacrifice. Regardless of the preservation method, each time I pulled the cork, oxidation started and I was locked into the bottle. My dream was to magically pour wine from bottles without ever pulling the cork. So there I was, an expert in needles. In particular, needles that don’t do damage to things. I came up with an idea to pass a non-coring needle through the cork while it was still in the bottle. My hope was that I could then return the remaining wine to my cellar, and enjoy it again and again, whenever I desired. I’m a science geek, so what followed was a decade of development and testing until I had a system that left the cork in place, but still delivered great glasses of wine, indistinguishable from untouched bottles. The Coravin Wine Preservation Opener has entirely changed my relationship with wine by giving me the freedom to access any wine at any time, in any quantity, without ever pulling the cork. The best part is that I can share my love of wine with my friends and family – my cellar has become my wine bar. Thanks to the Coravin, which I first encountered at SoHo’s Haven, I’m able to have a glass of Bordeaux from Pomerol poured from magnum to accompany my entree of roasted Welsh organic lamb saddle with chamomile. Mini raviolini stuffed with smoked potato, as well as some dollops of tart goat’s yogurt, balance out the lamb perfectly. My wine is fragrant, fruity and has the right soft tannic edge to cut the lushness of the meat. It’s another beautifully conceived and executed dish.
